Origin of the name of the cuvee

During the 17th century, a consul of Pépieux, also a knight of Alzau was a protector the of the village her daughter was called Claire.

Grapes

65% syrah, 17.5% grenache, 17.5% mourvèdre.

A.O.P Minervois Cru La Livinière

Type of vinification

Traditional with temperature control. 21 days of maceration, 12 months in oak barrel.

Food pairing

This wine joins to red meats, to meats in sauce, to games, as of the rabbit or the wild boar and also with some cheese.

The opinion of the wine steward

Very typical wine of our country, I shall accompany Claire d' Alzau to a tray cold meats, coppa, sausage. For a summer dish, I shall be of use a duck breast with French fries house and a sauce to peppers. In winter season, a rabbit in the mustard accompanied with fresh pasta. Cheeses as, the Roquefort grant with the perfection with this wine.
